Happy Holidays From The Stirling Club

The Stirling ClubDecember marks a special month for the Stirling Club. Eight years ago, the club opened with special guests that included Cheryl Tiegs, Alana Stewart, James Caan, and Jack Nicholson (among others). It is anyone's guess who will be here in the weeks ahead.

The Stirling Club is hosting several holiday events between now and the new year. And the best time to make plans is right now.

Christmas Eve Dinner, December 24.

The Stirling Club is hosting two Christmas Eve dinner seatings at 4 p.m. and 8 p.m. in The Stirling Room. The dinner features five entrees, including grilled ribeye, whole grilled boneless hen, braised beef short ribs with jumbo scallops, butter poached Maine lobster, and pan-roasted Chilean sea bass. The a la cart menu also includes your choice of appetizer and dessert.

Holiday Grand Buffet, December 25.

The Stirling Club will host a grand buffet created by Chef Charlie Palmer and his team of executive chefs with two seatings at noon and 3 p.m. on Christmas Day. Seating is extremely limited and reservations are required. $49.95 per person and $19.95 for children under 12. One of the outstanding features this year is a special appearance by Santa Claus and his elves.

New Year's Eve Celebration, December 31.

Las Vegas New YearJoin The Stirling Club with the legendary Lannie Counts Band. Lannie grew up singing with his dad's big band and his mom's hymnals and became an entertainer with a diverse repertoire that includes Motown, rock, jazz, and blues. The band recently celebrated its first album release.

Concurrent with the entertainment, the executive chef has prepared a special four-course dinner. There will also be a special bar menu and the entire event includes a complimentary champagne toast at midnight. Reservations are required. $99 per person.

New Year's Day Brunch, January 1.

After New Year's Day, The Stirling Club will host a second grand holiday brunch created by the executive chefs with two seatings at noon and 3 p.m. The brunch will include a carving station with beef tenderloin in a puff pastry, roast leg of lamb, and Maryland-style crab cakes.

There will also be a full shell fish display (including lobster) pasta stations, hot chafers, and a dessert tray with eight delightful treats that range from traditional cherry pie to the more creative Linzer torte. Seating is extremely limited and reservations are required. $49.95 per person and $19.95 for children under 12.

Members visiting from other cities are also encouraged to make their holiday selections as early as possible, as many venues will have limited hours and/or seating. Some may have a dress code.

Stirling Club Chefs Present A Holiday Cooking Demo

For the second time this year, Chef Steve Piamchunter will share some legendary cooking secrets. And this time, he will be joined by another well-known culinary name in Las Vegas — Anne Callaghan, chef de cuisine at The Stirling Club.

As some Stirling Club members know, Callaghan came to the club after serving five years as a sous chef and kitchen manager at Aureole Las Vegas in Mandalay Bay Resort & Casino. It was at Aureole that Callaghan originally developed a cooking class prototype for the Charlie Palmer Group. Prior, she had worked in several kitchens at the MGM.

Piamchunter is equally renown. He is a recognized chef with the Charlie Palmer Group and head chef at The Stirling Club. He has 10 years of experience working at some of the finest restaurants in Las Vegas after working at his family’s Thai restaurant in California.

Join Chef Steve Piamchunter And Chef Anne Callaghan For A Holiday Cooking Demonstration

At 6 p.m. on Wednesday, Dec. 8, these Charlie Palmer Group chefs will provide a light and refreshing cooking demonstration with an emphasis on the holidays. The rare evening event will a full three-course dinner and mulled holiday cider.

canapesWhile the specific menu won't be released, the demonstration includes holiday canapes (hors d'œuvres) and several quick and entertaining dishes for special gatherings. They will also present some menu-planning and cooking tips that will save time and money while adding flavor. And, unlike previous events, one portion of the demonstration will include a hands-on food craft with full participation. Each guest will then be able to take home their creations.

Chef Piamchunter sometimes shares modern recipes as a guest columnist. Chef Callaghan has appeared as a guest chef at several culinary events. Both are well-known for their culinary skills as part of the Charlie Palmer Group.

Since the opening of Aureole on the upper east side of Manhattan, American cuisine pioneer Charlie Palmer and all of his chefs have been world renown. His collection of coast-to-coast locations encompass numerous award-winning restaurants. Recently, six of his restaurants were the recipients of Wine Spectator's 2010 Best of Award of Excellence. Aureole Las Vegas was one of seven to win the Grand Award.

Charlie Palmer Group also handles The Stirling Club's exclusive private dining and catering options. The venue can accommodate groups from 20 to 500 people.

Hanukkah Dinner At The Stirling Club Las Vegas

MenorahThere are several ancient stories that have been tied to Hanukkah, but most celebrate the rededication of the Temple in Jerusalem (Second Temple) after its desecration by the King of Syria. He had outlawed Jewish religious rites and traditions.

Later, the Maccabees successfully rebelled and Jerusalem was freed. The Temple was purified and the wicks of the menorah miraculously burned for eight days, even though there was only enough sacred oil for one day's lighting. An eight-day festival was declared by the Jewish sages to commemorate this miracle.

It has become a beautiful holiday, rich with tradition and celebrated by a series of rituals that are performed every day throughout the eight-day holiday. Some are family-based and others communal. There are also special additions to the daily prayer service, and a section is added to the blessing after meals but it is not a "Sabbath-like" holiday.

Hanukkah Dinner At The Stirling Club.

On Thursday, Dec. 2, the Stirling Club will be featuring a special Hanukkah menu (and regular dining menu). The menu is prepared by the Charlie Palmer executive chef team.

It includes a first course consisting of matzoh ball soup and petit diced vegetables or a mixed greens salad with a balsamic vinaigrette. The main course will include your choice of a roast beef brisket with truffle steak fries or roast chicken with potato puree. And dessert will feature honey cake with a clear caramel sauce.

Reservations may be made by calling 702-732-9700 and the menu will be served a la carte. A special menu insert will also be available during the holiday. And members joining The Stirling Club on Thursday, Dec. 2 may take part in a special menorah lighting. Dinner will begin at 5 p.m.

The Menorah Lighting At The Stirling Club.

The menorah is described in the Bible as the seven-branched candelabrum made of gold. It was lit in the portable sanctuary set up by Moses and later in the Temple in Jerusalem. Fresh olive oil of the purest quality was burned daily to light its lamps.

Traditionally, Hanukkah lights should burn for at least one-half hour after it gets dark. The lamps of the menorah were usually lit daily from fresh, consecrated olive oil and burned from evening until morning. Many menorahs have nine candles, distinguishing them from those lit in the temple.

Spooktacular Ball Set For The Stirling Club

Halloween has had plenty of facelifts over the years. It has been traced back to both the Roman festival of Parentalia and the Celtic festival of Samhain. Even the advent of wearing costumes and asking for candy has some old roots. Shakespeare even mentions it in his comedy The Two Gentlemen of Verona (1593).

In the play, Speed accuses his master of "puling [whimpering or whining] like a beggar at Hallowmas." In the United States, Halloween seems to have taken hold after a large immigration of Irish, Scottish, and English immigrants in 1920. Now, Halloween is slowly becoming recognized as a global event. And in Las Vegas, it is just as much an adult festival as it is for kids.

The Halloween Spooktacular Ball At The Stirling Club.

Organized by Kelly Clinton, the Stirling Club's Spooktacular Ball (wear a costume) has become one of the most time-honored traditions at The Stirling Club. There will be live entertainment, a DJ, games, food, drinks, and a costume contest. Not only does the ball attract some celebrity participants (unbeknownst to members), but the costume contest is judged by several surprise guests.

The Halloween Spooktacular Ball at The Stirling Club will begin at 8 p.m. in the Cigar Bar and Piano Lounge. Reservations are required and participation is $24.95 per person. (Non-members may request a pass by contacting Kathleen Gustafson at 702-784-4603.)

"This is a must-attend event as the costumes are always fantastic and the night takes on a life of its own," said Mike Saye, general manager of The Stirling Club. "Every year, this party grows in size and there will be some surprises you won't want to miss."

Concurrently, Clinton will also be performing her Saturday show, Kelly Clinton and Friends, between 8 p.m. and midnight, but the haunting tends to last longer. So, please do not be surprised to see ghouls, ghosts, and costumed guests roaming the property.

Valckenberg And Bedford Wineries Arrive In Las Vegas

Wine Events at The Stirling ClubHosted by 20-year-old Renegade Wine Imports, The Stirling Club will become the center of a European wine tasting sensation, featuring imports from Valckenberg International and Bedford International. Together, these reputable wine makers and distributors have fashioned an intense collection of wines from Germany and Italy.

If you are unfamiliar with Valckenberg, it is the oldest family-owned wine merchant in Germany. It began when Dutch trader Peter Joseph Valckenberg (1808) purchased a winery that dated back with the Romans more than 2,000 years. Bedford International has a much younger history, being founded in 1949. However, it quickly grew to become an exclusive importer to the United States of fine Italian wines, a beautiful country where one of every 15 acres is dedicated to wine.

The Stirling Club German White And Italian Wine Tasting.

This remarkable wine tasting will take place from 6:30 p.m. to 8:30 p.m. on Oct. 28 in the north lounge. Participation is only $35, with Stirling Club Wine Society members receiving half off. Reservations are required and seating is extremely limited.

The selection of the evening represents some of the finest wines from both countries. From Germany, imports include the Mosel-Saar-Ruwer region, known for the finest Riesling wines in the world, and the Saarstein estate, which owns the oldest vineyards in the village of Serrig. From Italy, selections hail from the famed Piedmont region, the renowned Villa of Vignamaggio, an ancient hilltop town in southeast Tuscany.

What To Expect From The German Wines Highlighted.

Valckenberg Gewürztraminer, 2008 is a full-bodied, medium-dry white with a lovely aroma of roses, accompanied by flavors of ripe peach and litchi. Fruity on the front, it finishes finishes a bit drier with notes of nutmeg, cinnamon, and clove.

Maximin Grunhauser QbA Riesling, 2008 is spicy and fruity with aromas of peach and hints of black currant, typical for wines from the Abtsberg during the great years. It is packed with fruit and minerals, leaving a powerful and elegant taste.

Schloss Saarstein Kabinett Riesling, 2008features a crisp fruit taste, with the aroma of pear and kiwi. Expect a light and elegant flavor, with a touch of sweetness.

What To Expect From The Italian Wines Highlighted.

Volpi Barbera d'Asti, 2007 is medium-bodied wine with bright red fruit tones that feature hints of violet, earth, plum, and tannin. It is made with the barbera classic grapes in the Piedmont region.

Vignamaggio Chianti Classico, 2007 features a beautiful grape with soft tannins, succulent acidity, and moderately intense cherry and herb flavors. It is extremely easy to drink and often versatile as a dinner wine.

Umani Rochi Montepulciano d'Abruzzo, 2008 is a velvety red with supple fruit and a characteristic nutty, almost chocolate flavor often associated with Italian reds.

Castellucio Sangiovese, 2008 is known for soft tannins, succulent acidity, and moderately intense cherry and herb flavors. It is noted as a pure drinking pleasure blended with an unusual consistency.

Rivera Rupicolo (Mediterranean Blend), 2007 is generally characterized by its fruitiness and drinkability with a moderate structure. It will present a beautifully vibrant finish.

Carolina Herrera New York Visits The Stirling Club

There are only five Carolina Herrera flagship boutiques in the world, and one of them happens to be in Las Vegas (opened last December). But if you are one of the few unfamiliar with the name, Herrera is an amazing designer who won the "Womenswear Designer of the Year" in 2004 and the "Geoffrey Beene Lifetime Achievement Award" in 2008.

Recently, she received the distinguished "Mercedes-Benz Presents" title for her spring/summer collection, an award that should excite anyone who has a passion for fashion. While most designers were trying to find ways to cut corners in the last two years, Herrera has continued her dedication to using only quality materials, unique styles, and innovative designs.

What Makes Carolina Herrera So Unique?

Herrera appeared on the fashion scene almost three decades ago after being prompted by fashion legend Diana Vreeland and her great friend, the late Count Rudi Crespi. And, as someone who came from a long line of Venezuelan landowners and statesmen, Herrera helped fill a fashion niche that returned the look to a more cultivated and noble sensibility.

"I love the idea of elegance and intricacy, but whether it is in a piece of clothing or a fragrance, the intricacy must appear as simplicity," Herrera told Fashion Infomat. "I think that standard has served me well; women seem to love my clothes. I am extremely grateful for the success that they have given me."

The Stirling Club Presents Chef Oscar Toro

If you have ever dined at Asiate in Manhattan or Tetuya's Restaurant in Sydney, you may already be familiar with the culinary skill of Chef Oscar Toro. He has been a resident chef at both of these restaurants after his early start as chef de partie at the Four Seasons Hotel’s Fountain Restaurant in Philadelphia in 1999.

Nowadays, of course, he is best known as chef de cuisine at SUSHISAMBA in Las Vegas. But his experience at some of the world's finest restaurants contributed to him becoming the master chef he is today.

If you are unfamiliar with SUSHISAMBA, it is the only restaurant in the world to serve traditional Japanese, Peruvian and Brazilian dishes under one roof. Originally opened in New York, Las Vegas is one of the newest locations to offer up an incredibly diverse menu with sizzling meats from a robata grill, super fresh sushi, classic sashimi, and South American ceviche. Most fans rave about the fusion of these foods, which is no accident.

Some of it comes from Chef Toro and his extensive travels. In fact, he had just completed a three-month trek across Japan and Southeast Asia, sampling as many dishes as possible, before joining SUSHISAMBA. Even more remarkable, this trip was only his most recent culinary exploration. He has visited six continents in the past five years.

The evening begins with a cocktail reception, where guests will be able to meet Chef Toro before he presents a live cooking demonstration. Immediately following the reception, guests can enjoy a remarkable dinner menu created especially for this special event.

The menu opens with jumbo shrimp ceviche with passionfruit, cucumber, and cilantro. The appetizer will be followed by seared OToro Kobe beef, tuna tataki, and miso-marinated Chilean sea bass. And, for dessert, participants will finish with warm chocolate banana cake with maple butter, banana chip, and vanilla rum ice cream.

Let's Misbehave In Vegas: A Tribute To Cole Porter

Not everyone knows his name, but almost every generation knows his work. Broadway composer and songwriter Cole Porter has been covered by everyone, including artists like U2, Annie Lennox, and Shane MacGowan.

But even before that, the music and compositions of Porter had been made famous by Fred Astaire, Ginger Rogers, Ella Fitzgerald, Gene Kelly, and Ethel Merman. His sophisticated, bawdy lyrics, clever rhymes, and complex forms have galvanized generations since his big Broadway break toward the end of the roaring twenties.

Let's Misbehave: A Tribute To Cole Porter At The Stirling Club.

Set in an exclusive club reminiscent of an upscale speakeasy, Las Vegas will become home for Broadway for one night (Thursday, Sept. 30). This exclusive dinner show performance will be modeled after an interactive radio show under the direction of EJG Productions, a nonprofit theater experience led by Edward Gryska and Brandon Klock.

"When Porter wrote these songs for Broadway, they were sung by young Broadway performers. Mary Martin, Gene Kelly, Ethel Merman and others were all in their late teens and early 20s," says Gryska. "So casting young performers will give you an idea of what it may have felt like at that time."


As a mock radio show performance, the young players will sing into the microphone and interact with guests. much like they might have on Broadway or in speakeasies during prohibition. The entertainment will include a popular selection of Porter favorites, including songs from shows such as Kiss Me Kate, Can Can, and Anything Goes.

As a tribute, Gryska has also included several quality compositions from lesser known shows, Let's Misbehave from Paris (Porter's big break on Broadway) and You Do Something To Me from Fifty Million Frenchmen, among them.

Dinner service will begin 30 minutes prior to the start of the show. It includes a grilled petit filet and sauteed tiger shrimp, served with a horseradish pomme puree and pencil asparagus. The accompanying appetizer will feature autumn field greens and goat cheese fritter. Caramelized pear tart tatin will be served for dessert.

Celebrate Labor Day At The Stirling Club

Stirling Club PoolWith more than 273,000 people expected to make their way to Las Vegas for the long Labor Day weekend, some visitors might be wondering where they can find a more intimate gathering. Mike Saye, general manager of the Stirling Club, has one idea.

"The Labor Day Margaritaville pool party is a fun way to wind down the summer season," said Saye. "There will be a tropical buffet, island music, hula hoop and limbo contests, and complimentary draft beer with the buffet."

Set for noon to 4 p.m. on Sunday, Sept. 5 in the lagoon pool, the special event features "island escapism" style music inspired by Jimmy Buffett. Expect to hear "Cheeseburger in Paradise" and "Margaritaville" among the mix of hits. Kelly Mcquire, Jim Morris, and Rick Steffen might be in the lineup too.

Served poolside, the Stirling Club chefs have created a variety of island favorites, including Calypso island salad, tropical fish tacos, and even mini-cheeseburgers in paradise. Along with the buffet, complimentary draft beer will be served throughout the event. Drink specials will also include beer, carrot juice, and margaritas.

For those who remember the sensational Fourth of July pool oarty, the Labor Day Margaritaville pool party will be just as fun with a more relaxed theme. Members can enjoy all the activities for $24.95 per person, $12.95 for children under 12. Monday Night Football Parties Start At The Stirling Club.

Monday Night Football Las VegasLabor Day weekend also marks the return of the Stirling Club's legendary Monday Night Football parties in the Cigar Bar. The first game of the season will feature the Baltimore Ravens and New York Jets at the New Meadowlands Stadium. While the Ravens are favorites, anything can happen on Monday night. These two teams haven't faced off since 2007 (Ravens 20, Jets 13).

For a modest $20 at the door, members are treated to an endless assortment of game day food, big screen action, and an open bar on all sponsored brands. Kick off begins at 4 p.m., but many members arrive early for best seats. (Must be 21.)

Starting at 6 p.m on Aug. 12 in the north lounge of The Stirling Club, this special presentation begins with a recap of the more memorable fashions to hit the runway for fall 2010. Immediately following the fashion line, the real work begins as Joni Hoffman provides some candid advice for women hoping to define their style, shop with clarity, and multitask their wardrobes.

"Since fashion is constantly changing, it is difficult for most of us to keep up," offers Hoffman on her site. "Every woman wants to feel confident and beautiful regardless of age, body type or lifestyle. I believe that every woman can achieve her own personal style."

Her thoughts on dressing right have very little to do with being trendy. She offers up much more pertinent advice, guiding women toward fashions that fit, look flattering, and raise self-esteem because the people around you are more likely to notice you as opposed to what you are wearing. As Hoffman put it, the clothes you wear work best when they reflect you.

Rodney Strong, who left behind his successful career as a professional dancer to found Rodney Strong Vineyards in 1959, was a remarkable leader who transformed Sonoma County from rustic farmland into one of the finest wine regions in the country. His legacy continues today as Rodney Strong Vineyards grows and produces wines from grapes in Alexander Valley, Russian River Valley, Chalk Hill, and Sonoma Coast.

Summer Reds & Whites At The Stirling Club


Most people know that food is the primary consideration for choosing the right wine. But with some fine restaurants making subtle changes to match the season, some wine lovers are at a loss without their favorites. Naturally, it's perfectly fine to select whatever seems right. However, you might surprise yourself after tasting a variety of summer reds and whites from around the world.

To help make introductions to a few summer favorites, The Stirling Club has invited Brett McAnnany with Red Rock Wines to share his selections from 6:30 p.m. to 8:30 p.m. on July 8 in the north lounge. What To Expect At This Summer Wine Tasting

Germany — Riesling, St. Uban-Hof, 2009
Consistently rated 90 by Wine Spectator for several years, this Riesling is one you don't want to miss. It comes from Leiwen, Germany, where the Weis family has made exceptional wines for generations. Their philosophy is simple: great wines are made in vineyards, not so much in cellars.

United States — Sauvignon Blanc, 75 Wine Company, 2008
With its ripe pear and citrus notes with tropical fruit flavors, this Sauvignon Blanc comes from the Red Hills Appellation, which is known for having the cleanest air in California. The secret? It is fermented completely in stainless steel and aged sur lie for nearly three months to enhance its complexity.

Argentina — Finca La Linda, Luigi Bosca Torrontes, 2009
This wine is from Bodega Luigi Bosca and comes from Mendoza, Argentina. It’s 100 percent Torrontés grown at more than 5,500 feet above sea level. The company shares its entire winemaking process on its Website.

France — Syrah-Grenache Les Vignes de Bila Haut, Cotes de Roussillon Villages, 2008
Roussillon is the sunniest region in France, which makes the region similar to Spain. Some people suggest this is why Roussillon wines haven't received as much attention. This one will. The dark red fruit is distinct, with a burgundy-like color. In 2008, this wine made the top 100.

Italy — Dolcetto, Camerano Dolcetto d'Alba, Piemonte, 2007
Made from the black grape grown in the Piedmount region of northern Italy, Camerano Dolcetto d'Alba features a youthful flavor with berries and tannis. The wines made here follow tradition, but Ettore and his son Vittorio Camerano are starting to keep an eye on the future.

Spain — Grenacha, Tempranillo, Syrab, Cab Blend, Cellars Pinol "Ludovius," 2008
Possibly the heaviest wine of the summer selection, this blend carries a glass-coating crimson hue with cherry, blueberry, and blackberry. The estate consists of 100 acres in the town of Batea in Terra Alta, Spain. Cellar Vinos Pinol was founded in 1945 and remained in the family for four generations.

Las Vegas Fourth of July 2010: Stirling Style

Las Vegas makes for a great Fourth of July destination because of the extended weekend, but it's not easy to find some semblance of patriotic offerings. One of the best traditions used to be found at Hills Park in Summerlin, but the Las Vegas Philharmonic event was moved to the Springs Preserve, where fireworks are not an option. This year, its event is the day before.

You can still find some sort of tradition, however. The Stirling Club will be hosting its annual Fourth of July Independence Day pool party from noon to 4 p.m. on Sunday, July 4. Member attendance is $24.95 per person; $12.95 for children under 12. Reservations are required.

The Stirling Club's Fourth of July Independence Day pool party includes live entertainment and an extensive barbecue buffet. Some menu highlights include roasted baby back ribs, char-grilled Angus burgers, barbecued chicken with pineapple sauce, and grilled kielbasa. There are dozens of sides and salads as well. The dessert selection includes strawberry shortcake (with flag decorations), apple pie, dark cherry pie, fudge almond brownies, and lemon squares.

"Seating will be available in the Verandah Room or poolside," says Mike Saye, general manager of The Stirling Club. "You are welcome to enjoy lunch whether or not you attend the pool party."

With all the entertainment options and events, most people will attend the pool party. In addition to a guest DJ, The Stirling Club will host the Bootlegger Bistro's Future Stars. As these talented singers and the band play on, there will be other events, including a pie eating contest.

After the event, feel free to stay on into the evening. Or if you are hoping to end the evening with fireworks, there are a few limited choices.

Also on July 4, The Stirling Club will be hosting its Wimbledom Championships. Strawberries and cream will be served at the tennis courts from 8 a.m. to 11 a.m.

• The City of Henderson, which used to have one of the most popular park celebrations, seems to have scaled back to a single viewing area at the Basic High School football field. The celebration will take place between 6 p.m. and 9 p.m. There will be live entertainment throughout.

• As an alternative, try one of five Station Casino properties. Green Valley Ranch, Aliante Station, Red Rock Resort, Fiesta Rancho and Texas Station will be be setting off fireworks displays by Gruccis of New York. Gruccis of New York is a five-generation, family-owned and operated company on Long Island. Las Vegas is also a distribution center for the company. The display, which will last nine minutes, will start at 8:45 p.m.

Award-Winning Pairings: French Cheese & Wine

With a history dating back some 6,000 years, few foods go as well together as cheese and wine. In ancient Greece, citizens even set shavings on top to enhance the flavor. Nowadays, there are classes to help people learn to make perfect pairings beyond matching wine and cheese by region or that reds prefer hard cheeses while whites tend to do best with soft.

At the Stirling Club, Ramon Triay, director of food and beverage, has arranged a French wine and cheese pairing at 6:30 p.m. on Thursday, June 10 to be held in the north lounge of the Stirling Club. Featured Wine Selections For Cheese Pairings

Champagne, Louis de Sacy, NV. From Verzy, this cuvee offers wonderful spring fruit notes of strawberry and pastry. The region is located in northern France and is well known for its patchwork of hamlets, villages, and slopes planted with grapevines.

Château de St. Martin, Cotes de Provence, Rose, Grand Reserve, 2009. From Provence, France, Château de St Martin is known for its 12th century cellar and wooded parkland. It is also known for its cultural depth as a true rose.

Saumur Champigny, Domaine de La Perruche, Loire Valley, 2008. Saumur-Champigny is located between Anjou and the Touraine and its minerally, usually austere red wine comes from Cabernet Franc.

Château Les Hauts-Conseillants, Bordeaux, 2008 Simply put, it is one of the most consistently graded wines to come out of the Bordeaux region of southwestern France.

Château Trianon, St. Emilion, Grand Cru, 2004 This serious wine with an excellent body and well-extracted tannins as might be expected from the famous appellation from the east.

Château La Varière, Coteaux de Layon Le Savetier, Loire Valley, 2008 From an area often called the "Garden of France," the valley is an enchanted land of vineyards, flowers, and rolling green hills.

These wines will be matched to a mild Brie made near the Champagne region, a special cellar-aged wash rind cheese, various hard cheeses, and a mild French blue cheese. Accompaniments will include dried fruit, fruit paste, and toast points. The event will conclude with a traditional crème brûlée.

Memorial Day Weekend Means Pool Time In Las Vegas

Memorial Day weekend officially kicks off the summer in Las Vegas, typically drawing more people than any other weekend other than New Year's Eve. It also marks the official opening of The Stirling Club's outdoor lagoon-sized pool.

You might not find the pool listed among the most lavish or known for having the biggest parties. What you will find is a a much more private and discriminating experience with the pool's opulent mosaic tile, whirlpools, and and chaises.

Memorial Day Pool Party at The Stirling Club.

Beginning at noon on Sunday, May 30, The Pool Pavilion will be serving complimentary hotdogs, fresh lemonade, snow cones, and cotton candy. There will be a live DJ, and plenty of room to swim and socialize. The Pool Cafe will also be open.

Five More Pools To Explore In Las Vegas

Mandalay Bay. Frequently rated the number one pool in Las Vegas (and best in the U.S. in 2006 by TripAdvisor), Mandalay Bay delivers an 11-acre tropical lagoon with a sandy beach plus three pristine pools and a lazy river.

The expansive pool area also features nine private bungalows, 100 cabanas, and beachside lounges. It hosts several beach concerts and tends to be crowded. For Mandalay guests (ages 21+) without children, an additional admission charge will provide access to the Moorea Beach Club, which is a European-style pool area.

Wynn Las Vegas. It has taken the pool at Wynn Las Vegas some time to receive recognition, but online reviews have helped it gain more attention. It consists of two circular pools connected by a channel of water. Like Mandalay Bay, there is also a European-style pool area (behind the main pool).

Most of the attention has been lavished on its cabanas, which are well-constructed buildings with overhead fans, refrigerators, and personal servers. The more lavish VIP Tower Suite cabanas have WiFi, minibars, flat screen TVs, and access to quieter pools. Nearby, there has been some buzz centered on the new Encore Beach Club, which is a new pool complex for adults (ages 21+).

The Venetian. Centered inside The Venetian Gardens, there are two standard pools and one lounger pool typically described as being quieter and more relaxing than the most popular. What makes the pool stand out is its location behind zigs and zags of neatly trimmed hedges.

The Venetian is frequently given kudos for its cabanas, which include all amenities such as cordless house phones, flat screen televisions, DVD players, personal safes, refrigerators, and more. The Riva Restaurant by Wolfgang Puck is accessible poolside. The Venetian is also home TAO Beach, which serves as its adults-only (ages 21+) area with lively entertainment.

Caesars Palace. Since its expansion to add more pools for a total of eight in the 5-acre Garden of the Gods Pool Oasis, Caesars Palace has made great strides in providing guests with several different experiences. While areas around the Temple Pool are tiered, other pools are more secluded, more swim oriented, or more open for better sun. You can find one of the better write-ups here.

The Venus Pool Club is Caesars Palace's contribution to European-style (ages 21+) bathing. The club is known for lavish cabanas and vibrant entertainment. Unique services in The Venus Pool Club include frozen towels, Evian face spritzers, body massages, and Skyy Vodka-infused snow cones on the drinks menu.

MGM Grand. The MGM Grand frequently makes the top five of most pool lists, with its Grand Pool complex featuring five pools, including a river pool. The complex is also one of best landscaped and has three large whirlpools, tropical landscaping, fountains, and waterfalls. It typically has more lounge space than many others.

For a more vibrant party atmosphere and saltwater pools, Wet Republic is a hot spot favored by celebrities, especially among E! Entertainment Channel celebs. On Memorial Day weekend, pool parties will be full swing with dozens of entertainers that include Sharam, Freddie Le Grand, Dirty South and DJ Chuckie.

Almost all Las Vegas pools are reserved for hotel guests, with exception to scheduled entertainment. Likewise, The Stirling Club pool is open to members only. Award-Winning Pairing: Sonoma Meets Napa

The New York Times once revealed that the residents of Sonoma County will admit that Napa Valley is better known and has better restaurants, but that is about it. In truth, comparing the two isn't fair for wine enthusiasts.

They both offer a different experience, with Sonoma known for its rustic surroundings and Napa Valley as one of the premier travel destinations in the world. As for the wine, Napa does tend to be better known for its Cabernet Sauvignon and Sonoma for its Zinfandel, Pinot Noir, and Syrah. Even in planning the May wine dinner, it proved too hard to choose.

On Thursday, May 6, The Stirling Club in Las Vegas will showcase select wines from Napa and Sonoma, paired with the creations of The Stirling Club chefs. The dinner includes four remarkable wines poured at a pace of one per course, with a reception at 6:30 p.m. and dinner at 7 p.m.

What To Expect From The Sonoma Meets Napa Dinner

First Course. The evening begins with a Pinot Noir, Sonoma County, 2007 from McIlroy Cellars. Expect aromas of cherry and spicy earthiness accompanied by Bibb lettuce salad, topped with chilled tiger shrimp. The citrus vinaigrette and pecorino brilliantly marry the opener with the wine, which is also the wine special of the month at the Stirling Club.

"Will McIlroy...make[s] a line of very impressive wines that are excellent values," said Dan Berger, syndicated wine columnist.

Second Course. Grilled breast of quail and a crisp quail spring roll, quinoa salad, and a roasted poultry reduction will be paired with a Cabernet Sauvignon "Venezia", Alexander Valley, 2006, from the Meola Family Winery. Mario Meola is known for his viticulture practices that are mostly organic, and delivers a rich and complex age-worthy Cabernet Sauvignon.

Main Course. A remarkable trio of spring lamb roasted chop, braised shank croquette, and spice Merguaez will be treated with a Cabernet reduction with peppermint, aioli, piquillo, and pepper compote. The meal will be accompanied by Cabernet Sauvignon, Napa Valley, 2006 from Lindstrom Wines. What makes Lindstrom unique is it only produces a single, estate-grown Cabernet Sauvignon, using a selection of the very finest grapes from its 4-acre hilltop Nicali Vineyard in the heart of the Stags Leap District.

3rd Annual Stirling Art & Wine Walk In Las Vegas

Las Vegas might sometimes seem like the most unlikely place, but it is home to several dozen international and exceptionally talented artists. The climate, lifestyle, and continual buzz of international visitors has attracted them.

This Thursday, April 15, is an opportunity to see some of their work at the 3rd Annual Art & Wine Walk at The Stirling Club in Las Vegas. The Art & Wine Walk features about 20 different local artists and six different wines from three different wineries. It's an excellent and rare opportunity to see the work in the comfortable surroundings of the most exclusive club in Las Vegas and meet many of the artists in person.

Highlighted Wines From Handley Cellars

Handley Cellars, operated by winemakers Milla Handley and Kristen Barnhisel, is an organic certified estate vineyard in the Anderson Valley, known for its cool foggy nights and bright sunny days. The Handley family also owns a Dry Creek Valley (Sonoma County) vineyard near the Russian River. Featured wines* include:

Highlights From William Hill Estate

The William Hill Estate was designed with winemaking in mind.
